This offering: A menu for a meeting of the Les Amis d' Escoffier dining club, Park Lane, New York, 1940. The menu is in good condition, back side may have old paste marks but negligible, mostly menu used for signatures on the front cover of certain of the attendees. Pamela used this menu in her Cookbook Passion. See photos. One of the pages is 'Gourmet Dinners' by G. Selmer Fougner, food columnist for the NY Sun who wrote a column 'Along the Wine Trail'. His signature is seen top center on the menu. Other signatures who we could identify are Maurice Chappuis, Peter Fullar, WW Hull representing Cutty Sark scotch(?), Paul A Spitler, Fernard Berger, Francis Rhein, Maurice Roux, Maurice Lassauze, Robet Auddan, Frances J Bourdon. Maybe another famous chef's signature is hidden in the grouping.
Why this menu is important. In Cookbook Passion, Pamela writes: In 1936 the American Culinary Federation gathered at the Waldorf Astoria to form an epicurean society based 'to bring together members of the culinary profession and loyal friends who appreciate good food and wines, who believe in the adage, 'Live and Let Live'." The name was a tribute to Auguste Escorrier (184601935) who had recently passed away and was considered the 'King of Chefs'. [Cbk Passion: Chapter 3 pages 43-44.]
